1. Prepare the Plum and Basil Compote
Start by thoroughly rinsing and then chopping the 4 yellow plums into small cubes. Next, finely chop 8 basil leaves. Combine the plums and basil in a saucepan, cover with water just enough to submerge the ingredients, and bring to a boil. Allow the mixture to cook down into a compote. Once done, remove from heat and lightly mash if needed, then stir in 1 teaspoon of agave syrup. Set aside to cool.
2. Prepare the Brick Pastry Bases
Cut 6 to 8 circles from the 2 brick pastry sheets, each circle should be 0.5 to 1 cm larger than your tart molds. Lightly brush each circle with some olive oil. Layer 3 to 4 circles into each tart mold. Pre-bake the bases in an oven preheated to 220°C (428°F) for 3 minutes. Remove from the oven.
3. Prepare the Ganache
Melt 30 grams of chocolate in the microwave. Mix in 2 tablespoons of cream until you achieve a smooth ganache.
4. Assembling the Tartlets
Spoon a layer of the ganache into the bottom of each pre-baked tartlet shell. Top the ganache with the plum and basil compote.
5. Final Baking
Bake the tartlets for an additional 20 minutes at 220°C (428°F). Allow to cool before carefully unmolding.
Finishing Touches
Serve each tartlet drizzled with the remaining 2 teaspoons of agave syrup and garnish with small basil leaves to enhance the presentation and flavor.
