– Heavy cream: 200 g
– Butter: 30 g
– Pie crust: 150 g
– Pistachio paste: 4 tbsp

1. Blind Baking the Pie Crust

Preheat your oven to 350°F (180°C). Roll out the pie crust in your pan, prick the bottom with a fork, and place a weight (baking beads or dry beans) on parchment paper. Bake for 15 to 20 minutes until the crust is golden brown. Allow cooling completely.

2. Making the Kadaif Crunch

In a skillet, melt a small amount of butter. Add the 150 g of kadaif (angel hair) and toast them over medium heat while stirring continuously. Once they are golden brown and crispy, remove from heat.

3. Pistachio Paste Preparation

Then mix them with the 4 tablespoons of pistachio paste until everything is well coated.

4. Creating the Creamy Ganache

Heat the heavy cream to a boil. Pour it over the dark chocolate chips in two batches. Let it sit for a minute then gently stir with a spatula to achieve a smooth texture. Add the cold butter and stir again to obtain a shiny ganache.

5. Assembling with a “Dubai” Effect

Pour half of the chocolate ganache over the cooled pie crust. Evenly spread the pistachio-kadaif crunch mixture over the entire surface. Finally, cover with the remaining ganache to encase the crunch.

6. Adding the Second Chocolate Layer

Pour the rest of the ganache over the top.

Finishing and Chilling
