This delectable recipe yields three small focaccias, perfect for sharing during appetizers or as a side dish. Each focaccia is infused with the aromatic flavors of fresh thyme and topped with luscious melted Swiss cheese.

– Thyme: 10 g
– Salt: 5 g
– Sugar: 1 pinch
– Olive oil: 10 ml
– Fleur de sel: 2 g
– Appenzeller cheese: 50 g
– Yeast (baker’s): 1 packet

Step-by-Step Instructions
1. Activate the Yeast
– Combine the baker’s yeast with warm water and let it rest for 10 minutes.
2. Prepare the Dough
– In a mixing bowl, combine the flour, salt, and a pinch of sugar. Add the yeast-water mixture and stir until a uniform and sticky dough forms.
3. First Rise
– Cover the bowl and allow the dough to rise for about 2 hours, or until it has tripled in size.
4. Shape the Focaccias
– Gently punch down the dough to release air. Mix in 40 g of grated Appenzeller cheese, then divide the dough into three equal parts. Form each part into a ball and place them into three oiled 16 cm diameter baking molds.
5. Second Rise
– Drizzle a little olive oil over the dough balls. Using your fingertips, create dimples in the dough. Sprinkle with fleur de sel and let them rest for another 1 hour and 30 minutes.
6. Bake and Gratinate
– Preheat the oven to 200°C (392°F). Bake the focaccias for about 20 minutes. A few minutes before finishing, sprinkle the remaining 10 g of grated Appenzeller cheese on top to allow it to melt and gratinate.
Finish and Serve
– Remove the focaccias from the oven, drizzle with a bit more olive oil, sprinkle fresh thyme, and add a touch of fleur de sel. Serve warm, enjoying the fragrant and cheesy goodness.
