1. Dough Preparation

Start by setting aside a glass of the 250ml of lukewarm water to prepare the starter. Mix in the fresh yeast, sugar, and a little bit of flour. Stir and let it sit for about 10 minutes. In a mixing bowl, combine the flour, salt, milk, egg, and olive oil. Make a well in the center and add the starter mixture and then gradually the rest of the water. Begin kneading the dough for about 10 minutes until it’s smooth. Form it into a ball and let it rest in a bowl covered with a kitchen towel for 1 to 1.5 hours, depending on the room temperature.

2. Filling Preparation

While the dough is resting, start preparing the filling. In a skillet, add a teaspoon of olive oil and sauté the onions until they are nicely browned. Set aside. In the same skillet, add another teaspoon of olive oil and cook the ground meat with salt, pepper, and garlic powder. Set aside. On a floured surface, punch down the dough and roll it out into a rectangle about 30×45 cm. Spread the tomato sauce evenly over the surface, then add the cooked onions, ground meat, oregano, and sprinkle with grated Gruyère cheese.

Roll the dough tightly into a log and cut into 6 pieces, each about 5 cm thick. Place the pieces in a round baking dish with the cut side facing up so that the filling can be seen. Cover and let them rest again for 30 minutes to an hour, allowing them to fully expand and fill the dish. Preheat the oven to 180°C (356°F). Brush the dough with a bit of milk.
