After numerous attempts, I’ve perfected a recipe that closely mimics the delightful bread found at Subway. Ever fancied enjoying a crispy Italian bread bursting with flavor from the comfort of your own home? This recipe allows you to create delicious breads with soft crumbs and golden crusts. While straightforward to prepare, they do require a bit of patience for the rising times.

Ingredients

For 4 people:

– Baker’s yeast: 1 tsp
– Sugar: 1/2 tsp
– Warm water (60 ml during kneading): 110 ml
– Salt: 1/2 tbsp
– Flour (Type T55): 250 g
– Vegetable oil: 40 ml
– Parmesan cheese: 15 g
– Garlic powder: 1 tsp
– Oregano: 1 tsp
– Olive oil: 1 tsp

Preparation

1. Start by combining the yeast, sugar, salt, and 50 ml of warm water in a measuring cup. Stir well and allow it to activate for 5 minutes. In a large mixing bowl, add the flour and make a well in the center. Pour the yeast mixture and 40 ml of olive oil into the well and begin kneading. If necessary, gradually add up to 60 ml more water. Knead thoroughly for about 7-10 minutes until the dough forms a cohesive ball. Cover with plastic wrap and let it rise for 1 hour and 30 minutes.

2. In the meantime, mix the parmesan cheese, garlic powder, oregano, and a tablespoon of olive oil in a small bowl. Set aside. After the dough has risen, divide it into 2 or 4 equal parts. Line a baking sheet with parchment paper and shape the dough into elongated loaves.

3. Using a sharp knife, make diagonal slashes across the top of each loaf. Brush the top of each with the parmesan mixture. Cover with plastic wrap and let rise for another 30 minutes.

To Finish

Preheat the oven to 428°F (220°C), placing water in the broiler tray or in a metal container in the oven. Bake for 25-30 minutes, depending on the oven. Keep a close watch during baking to ensure the loaves are just golden brown.
