– Ladyfingers: 36 pieces
– Fresh pineapple: 1 whole
– Smooth quark cheese (40% fat): 500 grams
– Fine sugar: 125 grams
– Gelatin: 5 sheets
For the syrup
– Water: 30 cl
– Fine sugar: 135 grams
Preparation
1. Begin by preparing the fresh pineapple. Cut off both ends with a sharp knife. Carefully peel the skin off following the shape of the fruit. Remove the eyes. Slice the pineapple in half, cut out the tough, fibrous center, and chop the remaining fruit into small pieces, dices, or cubes. Make a syrup by boiling the 30 cl of water with 135 grams of fine sugar. Submerge the pineapple pieces in the syrup, let them simmer for about twenty minutes. Remove from heat and allow the pineapple pieces to cool in the syrup. Once cooled, drain the pieces and reserve the syrup.
2. Soften the gelatin sheets in a bowl of cold water. Whip the quark cheese with the fine sugar. Heat 10 cl of the reserved pineapple syrup in a small saucepan over low heat (do not boil). Remove from heat and add the well-drained gelatin sheets. Stir until completely dissolved. Pour this mixture into the quark cheese, mix well, then fold in the pineapple pieces (save a few for decoration), and mix again.
3. Lightly moisten the ladyfingers with the remaining pineapple syrup. Line the sides and bottom of a charlotte mold with the ladyfingers. Pour in the pineapple and quark cheese mixture. Cover with a layer of syrup-moistened ladyfingers.
4. Place a small plate on top of the mold and press down lightly (you can place a weight on it). Refrigerate the charlotte overnight.
5. When ready to serve, unmold the charlotte onto a serving plate. Garnish with the reserved pineapple pieces. Decorate as desired. Enjoy chilled for a delightful taste!
