Ingredients
For 6 people:
– Eggs: 3
– Sugar: 155 grams
– Pinch of salt
– Vanilla yogurt: 125 grams
– Vegetable oil: 95 grams
– Fine semolina: 125 grams
– Pistachio powder: 125 grams
– Baking powder: 1 packet
– Water: 190 grams
– Orange blossom water: 4 tablespoons
– Milk: 250 grams
– Butter: 2 tablespoons
Preparation
1. **Prepare the Batter**
Preheat your oven to 350°F (180°C). In a mixing bowl, whisk together 2 eggs, 90 grams of sugar, and a pinch of salt until well combined. Add 125 grams of vanilla yogurt, 95 grams of vegetable oil, 125 grams of fine semolina, 125 grams of pistachio powder, and a packet of baking powder. Stir until the mixture becomes smooth and uniform.
2. **Bake the Cake**
Grease a 24 cm cake mold and pour the batter into it. Bake in the preheated oven for about 20 to 25 minutes, or until the top turns a light golden brown.
3. **Prepare the Syrup**
In a small saucepan, bring 190 grams of water, 65 grams of sugar, and 2 tablespoons of orange blossom water to a boil. Reduce the heat and let it simmer gently for about 10 minutes.
4. **Soak the Cake**
Drizzle the warm or cool syrup evenly over the hot cake. Allow the cake to absorb the syrup fully.
5. **Make the Cream**
In another saucepan, combine 1 egg, 2 tablespoons of cornstarch, 4 tablespoons of sugar, and 2 tablespoons of orange blossom water. Gradually whisk in 250 grams of cold milk. Place the pan over medium heat and stir continuously until the mixture thickens. Remove from heat and blend in 2 tablespoons of butter.
6. **Top and Enjoy**
Pour the cream immediately over the soaked cake. Let the cake cool before serving. Savor the rich flavors and creamy texture of this delightful dessert.
