Here’s a simple recipe for delicious date makrouts. I use both fine and medium semolina for the dough, which makes it wonderfully tender. These honey-soaked Middle Eastern pastries, scented with orange blossom, are essential for enjoying during Eid celebrations.

Ingredients

For 8 people:

– Fine semolina: 500 g
– Medium semolina: 250 g
– Liquid honey: 250 g
– Dates: 500 g
– Orange blossom syrup
– Peanut oil: 125 g
– Salt

Preparation

– Cooking: 10 minutes

1. Start by placing the semolina in a large bowl with a pinch of salt. Pour in the cold oil and mix together, then let the mixture rest for an hour.

2. In the meantime, prepare the dates by pitting and slicing them thinly (or use date paste). Add three tablespoons of orange blossom water and a spoonful of oil to make a flexible paste.

3. Preheat your oven. Add water to the semolina a little at a time (about a small glass in total) until you can form a workable dough. Take a small ball of dough (about the size of your fist), flatten it by hand on a board to about 2 cm thick. Work in small batches to shape the dough into rectangles approximately 30 cm by 10 cm.

4. Place a roll of date paste in the middle of each rectangle and fold the dough over to enclose it, forming a long cylinder. Cut this into small rectangles or other shapes, and fry them in a pan with about 5 mm of oil at the bottom until golden brown on each side.

5. Heat the honey with four tablespoons of orange blossom water.
