A chic, refreshing, and tasty dessert that’s not overly sweet and is packed with fruit. It’s perfect for cooling down on a hot day, and you don’t even need to turn on the oven to make it.
Ingredients
For 4 people:
Vanilla Layer:
– Powdered gelatin: 10 g
– Cold water: 50 g
– Heavy cream (at least 30% fat): 200 g
– Sugar: 50 g
– Whole milk: 200 g
– Vanilla extract: 1 tsp
Blueberry Layer:
– Powdered gelatin: 7 g
– Cold water: 35 g
– Water: 200 g
– Sugar: 40 g
– Juice of 1/2 a lime
– Purple food coloring (or a mix of red and blue): 4 drops
– Fresh blueberries: 250 g
Additional (optional):
– Mint leaves for garnish: 8 leaves
Instructions
1. **Prepare the Vanilla Layer:**
In a small glass, mix the powdered gelatin with cold water and stir. Allow it to swell for about 10 minutes. In a small saucepan, combine the heavy cream, sugar, milk, and vanilla extract. Heat over low heat (indicated as 8/14 on my stove) without bringing to a boil (around 60-70°C). Stir until the sugar dissolves. Add the swollen gelatin and stir again until it dissolves completely. Remove from heat and pour into a pouring jug. Tilt four 260 ml whiskey glasses at about a 45-degree angle in small bowls. Pour the mixture into the glasses, holding them steady. Carefully place the glasses in the refrigerator for 1-2 hours until the mixture sets firmly.
2. **Prepare the Blueberry Layer:**
In a small glass, mix the powdered gelatin with cold water and stir. Allow it to swell for about 10 minutes. In a small saucepan, combine 200 g of water, sugar, and lime juice. Heat over low heat (indicated as 8/14 on my stove) without bringing to a boil (around 60-70°C). Stir until the sugar dissolves. Add the swollen gelatin and stir again until it dissolves. Remove from heat, stir in a few drops of purple food coloring (or mix red and blue if you don’t have purple). Pour into a pouring jug and let it cool. Once the vanilla layer is firmly set, set the glasses upright and evenly distribute the blueberries among them. Pour the cooled mixture over the blueberries. Refrigerate again for 1-2 hours.
Serving:
Serve the panna cottas chilled, garnished with mint leaves.
