– Heavy cream: 40 cl
– Vanilla bean: 1 pod
– Egg yolks: 4
– Sugar: 80 g
– Pears: 2
– Pear liqueur: 2 tbsp
– Brown sugar: 4 tbsp

1. Cream Preparation
Vanilla Infusion: Heat the cream with the split and scraped vanilla bean. Remove from heat and let it infuse for 10 minutes.
Cream Mixture: Whisk the egg yolks with the sugar until the mixture turns pale. Gradually pour the strained vanilla cream over the yolks, stirring continuously.
2. Cream Cooking
Heat the mixture to 80°C without boiling. Stir in the pear liqueur.
3. Assembly
Peel and slice the pears thinly. Distribute them evenly among four ramekins.
4. Baking
Pour the cream mixture over the pears. Bake in a water bath at 120°C for 50 minutes. The cream should set but still wobble slightly when shaken.
5. Finishing Touches
Cooling: Allow to cool then refrigerate for at least 2 hours.
Caramelization: Sprinkle with brown sugar and caramelize with a torch just before serving.
