– Serves 4
– Fish fillet (tilapia, cod loin, or salmon) – 4 pieces
– Spinach – 500g
– Gluten-free pasta – 500g
– Onion – 1 piece
– Garlic – 2 cloves
– Fresh cream – 1 container
– Fresh herbs (chives and parsley)
– Paris mushrooms – 200g
– Salt
– Pepper
Instructions
1. Melt onions and garlic in a pan, then add the fish fillets. Sauté for 2 minutes on each side and remove the fish. Keep the pan with the remaining juices and onions aside.
2. Meanwhile, cook the pasta until al dente.
3. In the pan used for the fish, sauté the mushrooms in the juices, then melt in the spinach. Add chopped herbs and fresh cream. Season well.
4. Drain the pasta and gently mix it into the vegetable mixture. Add the fish at the last moment and garnish with basil.
Final Touches
Serve hot, optionally topped with grated cheese (such as Parmesan). Delicious with a tomato and red onion salad.
