Spinach ranks as the top vegetable choice in my household, which is why I often find myself whipping up this delightful and simple quiche.

Ingredients

– Red Onion: 1 whole
– Spinach: 400 grams
– Cherry Tomatoes: 250 grams
– Ready-made Puff Pastry: 1 sheet
– Eggs: 3
– Fresh Cream: 200 ml
– Feta Cheese: 200 grams

Preparation

– Cooking Time: 20 minutes

Step 1: Preparing the Filling

Begin by thoroughly washing the fresh spinach. Alternatively, you can use frozen spinach leaves. Next, slice the red onion into thin strips and sauté them in a pan over low heat with a drizzle of olive oil. Wash the cherry tomatoes; I prefer to halve them before tossing them into the pan with the onions. After adding the spinach, let everything sauté together for about 10 minutes. Meanwhile, preheat your oven to 400°F.

Step 2: Assembling the Quiche

Take a ready-made puff pastry and fit it into a pie dish. Use a fork to prick the pastry base to prevent it from puffing up during baking. In a mixing bowl, crack three eggs and pour in the cream, stirring to combine. Dice the feta cheese and add it to the egg and cream mixture. Incorporate the sautéed onion, cherry tomatoes, and spinach. Mix everything thoroughly and then evenly spread the mixture over the pastry.

Cooking

Bake in the oven for about 15 to 20 minutes at 350°F. Enjoy your meal!
