This simple recipe turns basic salmon fillets into a refined dish worthy of a top chef. The crispy puff pastry delicately wraps around the tender fish, while fresh herbs add a refreshing and aromatic touch.

Ingredients

For 6 people:

– Salmon (either prepared fillets from your fishmonger or 2 salmon fillets) – 1 whole
– Puff pastry (ordered from your local bakery) – 500 grams
– Fresh herb bouquet (chervil, parsley, spinach sprouts, coriander or whatever you have in your garden according to your desires or tastes) – 1 bouquet
– Salt – to taste
– Pepper – to taste

Preparation

1. Preheat your oven to 350-400°F (180-200°C).

Roll out the puff pastry into 2 equal rectangles, each slightly larger than the salmon fillets.

2. Place one seasoned (salt and pepper) salmon fillet on one of the pastry rectangles and spread it with the chopped herbs. Lay the second fillet on top of the herbs.

3. Cover with the second rectangle of pastry and seal the edges.

4. Use the pastry trimmings to create the tail, eye, and fins; attach them around the fish. Use the tip of a knife to draw scales on the pastry (you might want to refer to a picture for guidance).

To Finish

Brush the pastry with a mixture of one egg yolk and 2 tablespoons of milk, then bake in the oven for 30 minutes. Your salmon en croute should come out golden and flaky, ready to wow your dinner guests with its delightful presentation and succulent taste.
