– Spinach, 600g
– Eggs, 4
– Tomatoes, 4
– Preserved lemon, 1/2
– Onion, 1
– Fresh coriander, 1 bunch
– Cumin, 1/2 tsp
– Paprika, 1/2 tsp
– Ground chili, a pinch
– Salt, to taste
– Pepper, to taste
– Olive oil

Instructions

1. Start by finely chopping the onion. Sauté it in a bit of olive oil for about 3 to 4 minutes. Next, add the tomatoes, which should be peeled, deseeded, and crushed beforehand. Allow the tomatoes to cook for another 4 minutes over medium heat.
