Ingredients
For 3 servings:
– Spinach, 600g
– Eggs, 4
– Tomatoes, 4
– Preserved lemon, 1/2
– Onion, 1
– Fresh coriander, 1 bunch
– Cumin, 1/2 tsp
– Paprika, 1/2 tsp
– Ground chili, a pinch
– Salt, to taste
– Pepper, to taste
– Olive oil
Instructions
1. Start by finely chopping the onion. Sauté it in a bit of olive oil for about 3 to 4 minutes. Next, add the tomatoes, which should be peeled, deseeded, and crushed beforehand. Allow the tomatoes to cook for another 4 minutes over medium heat.
2. Add the spinach to the pan and let it wilt down for about 10 minutes. In the meantime, blend the preserved lemon pulp with the fresh coriander.
3. Combine the lemon-coriander mixture and the spices with the spinach. Let everything simmer together for roughly 20 minutes.
To Finish
Beat the eggs and season them lightly with salt and pepper. Stir the eggs into the spinach mixture. Keep stirring until the eggs are just set. Serve immediately for the best flavor and texture.
