This vibrant garden vegetable pizza brings back memories of the pizzas my Italian grandmother used to make during my vacations in Italy.

Ingredients

For 4 people:

– 1 pizza dough
– 3 tbsp green pesto
– 1 eggplant
– 1 zucchini
– 1 red bell pepper
– 100 g mozzarella
– 2 tbsp olive oil
– 1 pinch salt and pepper
– 3 basil leaves

Preparation

1. **Preheat the Oven**
Preheat your oven to 400°F (approximately 200°C).

2. **Prepare the Vegetables**
Slice the zucchini and eggplant into thin rounds, and cut the bell pepper into strips. Sauté the vegetables in a pan with olive oil until they are lightly grilled.

3. **Assemble the Pizza**
Roll out the pizza dough and spread it with green pesto. Arrange the grilled vegetables and mozzarella cheese on top.

4. **Bake**
Place in the oven and bake for 15 minutes. Once done, remove from the oven and garnish with fresh basil leaves.
