– Zucchini: 2
– Eggplant: 1
– Green bell pepper: 1
– Red bell pepper: 1
– Tomatoes: 3
– Onion: 1
– Garlic cloves: 2
– Bouquet garni (bundle of herbs): 1
– Olive oil: as needed
– Salt: to taste
– Pepper: to taste
Preparation
1. Begin by washing and cutting the zucchini and eggplant into medium-sized cubes. Slice the green and red bell peppers similarly. Quarter the tomatoes and thinly slice the onion.
2. Heat some olive oil in a skillet and sauté each type of vegetable separately for about 5 minutes until they start to brown. Start with the bell peppers, followed by the eggplant, then the zucchini, and finally, cook the onions and tomatoes together.
3. Once all the vegetables are sautéed, combine them with the tomatoes and onions in the skillet. Reduce the heat and mix well. Add a generous bouquet garni consisting of thyme, rosemary, and bay leaves. Season with salt and pepper, then cover and let simmer for 40 minutes, stirring occasionally.
4. About 10 minutes before the cooking is complete, add two crushed garlic cloves, then cover again. Taste and adjust the seasoning as necessary.
