Ham and Emmental Sunburst Pastry

– Puff pastry: 2 sheets
– Ham: 4 slices
– Crème fraîche from Isigny: as needed
– Pink onion: 1, finely chopped
– Grated Emmental cheese: as needed
– Black sesame seeds: for sprinkling (optional)
– Milk: 2 tablespoons
– Maggi seasoning: 3 tablespoons

Instructions
1. Preheat your oven to 320°F (160°C) using the convection setting. Unroll one sheet of puff pastry. Spread a thin layer of Isigny crème fraîche over it using the back of a tablespoon.
2. Finely chop the pink onion and sprinkle it over the crème, followed by a handful of grated Emmental cheese.
3. Arrange the four slices of ham to cover the entire surface, then sprinkle another handful of Emmental cheese on top.
4. Unroll the second sheet of puff pastry. Spread a thin layer of Isigny crème fraîche on it with the back of a tablespoon. Place it over the first layer, crème fraîche side down against the cheese. Gently press down with your palms. Remove the top parchment paper.
5. Place a glass upside down in the center of the pastry circle. Cut the pastry into strips like slicing a cake into 6, 8, 12, or 16 equal parts, leaving the glass in place. Carefully twist each strip once or twice around itself.
6. Combine milk and Maggi seasoning in a small bowl. Brush this mixture over the puff pastry using a pastry brush. If desired, sprinkle some black sesame seeds over certain twists and the center (remember to remove the glass first). Bake in the preheated oven for 1 hour at 320°F (160°C). Check for doneness.
