– 10 brick pastry sheets
– 5 sliced chicken escalopes
– 120 grams of melted butter for brushing
– 4 eggs

– 1/2 teaspoon ginger
– 1/2 teaspoon mixed herbs
– Salt
– Powdered sugar
– Pepper
– Ground cinnamon

Steps to Make Your Pastilla
1. Cook the Chicken and Egg Filling
In a pressure cooker, sauté onions in a bit of oil. Add the sliced chicken, coriander, and parsley, mixing thoroughly. Season with salt, pepper, cumin, ginger, mixed herbs, and a little water (about 100 ml). Let it cook for 15 to 20 minutes, allowing the mixture to reduce uncovered for a few minutes. Beat the eggs and stir them into the mixture while the heat is still on. Once fully mixed, turn off the heat and let the filling cool.
2. Brush the Brick Sheets with Melted Butter
Prepare a bowl of melted butter, a separate bowl of crushed toasted almonds, and your brick sheets ready for assembly. Using a brush, evenly coat the entire surface of the first brick sheet with melted butter.
3. Add Filling and Almonds to the Center
Place a tablespoon of crushed almonds in the center, then add the chicken filling on top.
4. Fold and Layer the Pastillas
Seal the sheet to form a hexagon shape. Take a second brick sheet, brush it with butter, and place the first filled pastilla (folded side down) onto the second sheet.
5. Bake and Garnish with Powdered Sugar and Cinnamon
Add a small handful of toasted almonds on top. Fold as before, placing the sealed side down in a tart pan without any added fat. Repeat with the remaining sheets. Bake in a preheated oven at 180°C (356°F) until golden. Once baked, allow to cool slightly and then garnish with powdered sugar, cinnamon, and more toasted almonds.
