1. Start by blanching the almonds: boil them briefly, peel, and then grind them into a fine powder. To the ground almonds, add the gum arabic powder, baking powder, butter, three egg yolks, one whole egg, powdered sugar, and lemon zest.
2. Mix all the ingredients thoroughly until you achieve a smooth dough. Oil your hands and shape the dough into small balls. Dip each ball into egg white and then roll them in powdered sugar for a sweet coating.
To Finish
