A full Welsh meal is a specialty from the North. Originally a traditional Welsh dish, it consists of melted cheddar cheese (originally Chester cheese), beer, and mustard served over toasted bread and ham with a fried egg on top.

Ingredients

For 2 people:

– 2 slices of rustic bread
– 2 slices of ham
– 200 grams of grated cheddar cheese
– 2 tablespoons of mustard
– 30 cl of beer
– 2 eggs
– A pinch of salt
– A pinch of pepper
– A knob of butter

Preparation

1. **Preparing the Bread Base**

Place the slice of bread in a suitably sized dish and soak it with beer, reserving 4 tablespoons for the cheese sauce. Allow it to soak while you prepare the rest of the recipe.

2. **Cheddar Cheese Sauce**

In a saucepan, combine the cheddar cheese, mustard, and the 4 tablespoons of reserved beer. Heat the mixture to melt the cheese and create a creamy sauce similar to a Savoyard fondue.

3. **Finalizing and Serving the Welsh**

Remove any excess beer from around the bread slice, place the folded ham slice on top, and then pour over the cheese sauce. Add a few twists of pepper from the mill.

Place under a hot grill in the oven to brown the top. Meanwhile, fry the eggs sunny-side up. Once the cheddar is bubbly and golden, place a fried egg on each serving and serve with fries and a side salad.
