Leek Croque Monsieur is a recipe I truly cherish because it incorporates vegetables into the sandwich, making it less dry and more delightful. It’s also incredibly quick to prepare.

Ingredients

For 4 servings:

– **Sandwich Bread**: 8 slices
– **Emmental Cheese**: 4 slices
– **Leeks**: 2 whole
– **Butter**: 4 dollops
– **Ham**: 4 slices
– **Salt**: 1 pinch
– **Pepper**: 1 pinch
– **Nutmeg**: 1 pinch

Preparation

1. **Preparing the Filling**

Start by melting some butter in a skillet. Slice the leeks and add them to the skillet, seasoning with salt, pepper, and a dash of nutmeg. Let the mixture simmer for about 15 minutes until the leeks are tender and flavorful.

2. **Assembling and Cooking Your Sandwich**

Take a slice of sandwich bread and spread a thin layer of butter on each slice. Place a slice of ham on the bread, followed by an even layer of the leek mixture. Top with a slice of Emmental cheese and cover with another slice of bread.

For cooking, I use a sandwich maker, but you can also bake it in the oven at 350°F (180°C) for 10-15 minutes until the cheese is melted and the bread is golden brown.
