Almond Fondant with a Crunchy Honey Topping
An irresistibly soft fondant with a crunchy top, thanks to caramelized honey almonds. This dessert is both sweet and indulgent, ideal for sharing during friendly gatherings.

For the Almond Fondant:
– Eggs: 4
– Brown sugar: 90g
– Salt: a pinch
– Vanilla sugar: 1 packet
– Almond powder: 250g
– Melted butter: 90g
For the Crunchy Honey Almond Topping:
– Butter: 50g
– Brown sugar: 50g
– Honey: 1 tablespoon
– Cream: 1 tablespoon
– Sliced almonds: 120g

Steps

Prepare the Fondant Base
Whip the eggs and sugar until the mixture is foamy.

Add Melted Butter, Salt, and Vanilla Sugar
Stir in the melted butter. Mix until smooth and even.

Incorporate Almond Powder
Gradually add almond powder while continuously stirring to prevent clumping.

Transfer to Baking Mold
Pour the mixture into a pre-lined or buttered mold.

Initial Baking
Bake in a preheated oven at 180°C (356°F) for about 20 minutes.

Prepare the Crunchy Honey Almond Topping
While the cake bakes, combine butter, honey, cream, and sugar in a saucepan and let them melt over low heat.

Add Sliced Almonds
Thoroughly mix to coat the almonds.

Remove the Fondant from the Oven
Take the cake out of the oven.

Spread the Crunchy Topping Over the Cake
Evenly spread the almond mixture over the entire surface of the cake.
Return to Oven
Place the cake back in the oven for an additional 20 minutes, or until the top is golden brown. Once removed from the oven, quickly run a knife along the edges of the mold before the caramel sets. Allow the cake to cool slightly before demolding and serving.
