A Modern Twist on the Classic Mille-Feuille
Introducing a contemporary version of the mille-feuille, elegantly infused with a hint of orange blossom that subtly flavors the pastry cream. The delightful contrast between the crispiness of the puff pastry and the smoothness of the cream makes this dessert both sophisticated and indulgent. This homemade recipe adds a unique and refined touch to the traditional French pastry.
Ingredients
Serves 6
– Milk: 500 ml
– Eggs: 2
– Egg yolk: 1
– Flour: 30 grams
– Sugar: 40 grams
– Puff pastry: 2 sheets
– Orange blossom water: 2 tablespoons
– Icing sugar: 60 grams
– Water: 1 tablespoon
– Dark chocolate: 6 squares

1. Making the Pastry Cream
Begin by heating the milk with the orange blossom water. In a bowl, whisk together the eggs, egg yolk, sugar, and flour until the mixture is smooth.
2. Cooking the Cream
Pour the hot milk over the mixture while stirring, then return everything to the saucepan. Cook over low heat for about 5 minutes, stirring constantly, until the cream thickens.
3. Cooling
Transfer the cream to a bowl, cover with plastic wrap touching the surface, and refrigerate until completely cooled.
4. Baking the Puff Pastry
Using a round cutter, cut circles from the puff pastry sheets. Place them on a baking sheet and prick with a fork. Cover with another sheet of parchment and a second baking sheet to prevent the pastry from puffing up. Bake the pastry scraps as well. Bake at 350°F for 20 minutes.
5. Assembling the Mille-Feuille
Fill a piping bag with the pastry cream. Assemble each mille-feuille with three pastry circles and two layers of cream.
Finishing Touches
Crumble the baked pastry scraps and scatter them around the mille-feuilles. Prepare the icing by mixing the icing sugar and water, and spoon a teaspoon of it on top of each. Melt the chocolate, drizzle over the top, and create patterns using a toothpick.
