Ingredients

  • 2 rolls of puff pastry
  • 3 eggs
  • 125 g of almond powder
  • 125 g of granulated sugar
  • 125 g of soft butter
  • 2 drops of bitter almond extract
  • 2 tablespoons of orange blossom water or kirsch

  • 1 egg yolk
  • 1 tablespoon of milk
  • 1 charm (fève)

  1. Use a fork to cream the butter until smooth. Mix in the almond powder and sugar. Add the slightly beaten eggs, bitter almond extract, and orange blossom water (or kirsch). Whisk thoroughly. Chill the mixture in the refrigerator for 10 minutes.
  2. Preheat the oven to 400°F (200°C). Combine an egg yolk with milk. Place the first sheet of puff pastry on a baking tray. Brush the edges (about an inch wide) with the egg yolk. Spread the almond cream over the pastry sheet, leaving the edges clear.
  3. Place a charm into the filling, pressing it down lightly. Cover with the second sheet of puff pastry. Seal the edges firmly together.
