Blackberry and Mirabelle Plum Cake

After a delightful walk in the forest picking blackberries, and gathering some mirabelle plums from the garden, you’re all set. Alternatively, feel free to use any fruit you have on hand; it will be just as tasty.
Ingredients

Dough:
– Eggs: 3
– Salt: 1/4 teaspoon
– Sugar: 200 grams
– Vanilla extract (or 1 packet of vanilla sugar): 1 teaspoon
– Sunflower oil: 50 grams
– Buttermilk (or yogurt): 250 grams
– Flour: 300 grams
– Baking powder: 11 grams
Additional:
– Blackberries (300+50g): 350 grams
– Flour: 1 tablespoon
– Pitted mirabelle plums, net weight (or 250 g whole): 200 grams
– Powdered sugar for dusting: 1 tablespoon

Steps to Prepare
1. Prepare the Dough
In a large mixing bowl, combine the eggs, salt, sugar, and vanilla extract. Beat for a few minutes until the mixture is light and fluffy. Add the oil and continue to mix until well incorporated. Follow with the buttermilk, mixing well. Sift in the flour and baking powder, and mix on low speed until just combined.
2. Preheat the Oven
Preheat your oven to 350°F (180°C), using conventional settings.
3. Prepare the Blackberries
In a separate bowl, toss 300 grams of blackberries with one tablespoon of flour. Gently fold them into the batter using a spatula.
4. Assemble the Cake
Pour the batter into a 20×30 cm baking dish lined with parchment paper, spreading it evenly. Halve the mirabelle plums and remove the stones. Place the plum halves cut-side down on the batter, pressing them slightly into the mixture. Scatter the remaining blackberries among the plum pieces.
5. Baking
Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
6. Serving
Allow the cake to cool, then remove from the pan. Dust with powdered sugar and serve.
