Ingredients

– Mascarpone: 250 grams
– Eggs: 3
– Sugar: 150 grams
– Speculoos cookies: 12
– Figs: 6
– Coffee: 200 ml
– Cocoa powder: 2 tablespoons

Preparation

1. Prepare the Cream

Whisk together the 3 egg yolks and sugar until you achieve a fluffy texture. Gently fold in the mascarpone to maintain the mixture’s airy consistency.

2. Whip the Egg Whites

Beat the egg whites until they form stiff peaks. Carefully fold them into the previous mixture to keep it light.

3. Brew the Coffee

Prepare unsweetened coffee and allow it to cool.

4. Dip the Speculoos

Quickly dip each speculoos cookie into the cooled coffee and arrange them at the bottom of each serving glass.

5. Assemble the Tiramisu
