Ingredients

For 6 servings:

– Strawberries: 2 containers
– Sugar: 200 grams
– Mascarpone cheese: 250 grams
– Ladyfinger biscuits: 1 package
– Eggs: 4
– Optional: Cocoa powder for dusting

Preparation

1. Preparing the Mixture:
Separate the egg whites and yolks. Place the whites in a bowl in the refrigerator. Mix the yolks with 100 grams of sugar until the mixture lightens in color.

2. Once the yolks and sugar are well combined and pale, incorporate the mascarpone and stir until the mixture is smooth and lump-free. Retrieve the chilled egg whites, add a pinch of salt, and beat them until they form stiff peaks. Gently fold the beaten whites into the yolk-sugar-mascarpone mixture gradually using a wooden spoon to maintain airiness.

3. Preparing the Strawberries:
Blend half a container of strawberries with some sugar to create a coulis. Dip the ladyfingers in the strawberry coulis to moisten them, then arrange them at the bottom of your serving dish. Spread a little extra coulis over the ladyfingers. Mash the remaining strawberries into a purée, making sure it’s not too watery, then sweeten with sugar as desired. Layer this strawberry purée over the ladyfingers.
