A Delicious Dish Reinvented at Home
A delightful recipe we stumbled upon while dining with friends, which my husband has since tweaked to add his own twist, is the duck breast with pineapple. This dish beautifully combines the robust flavor of the duck with the sweet and caramelized tones of the pineapple. It’s a sophisticated choice perfect for wowing your guests at a dinner party with friends or family.
Ingredients
Serves 4
– Duck Breast: 2 pieces
– Pineapple (fresh or canned): 8 slices
– Butter: 40 grams
– Granulated Sugar: 3 tablespoons
– Red Wine: 10 cl
– Sherry Vinegar: 1 tablespoon
– Parsley or Mint: a few sprigs
– Salt: to taste
– Pepper: to taste
Preparation
1. Start by trimming the nerves from the duck breasts using a small kitchen knife. Score the skin side deeply in a diamond pattern, taking care not to cut into the meat.
2. Heat a non-stick pan without any oil, place the duck breasts skin side down, and sear them. Flip to the meat side for 1 to 2 minutes to sear, then flip back to the skin side and let the fat render for 5 to 10 minutes. Spoon out the fat progressively to ensure the skin becomes crispy without frying.
3. Meanwhile, melt the butter in another pan, add the pineapple slices, and sauté them for 2 to 3 minutes in the butter. Then add the sugar and cook, stirring until the sugar starts to caramelize.
4. Pour the red wine over the duck breasts and allow it to simmer for 2 minutes.
5. Season the duck breasts with salt and pepper towards the end of cooking and keep them warm.
To Finish
Pour the vinegar into the pan and scrape with a spatula to dissolve the fond (cooking residues). Slice the duck breasts diagonally. Arrange on the plates by alternating a slice of duck and a slice of pineapple.
