These cookies are a delightful indulgence: crispy cookies paired with golden caramel and soft pineapple, all subtly infused with rum. A delightful twist on classic cookies that are sure to impress at snack time or as a dessert.

  • Sugar – 2 tbsp
  • Butter – 95g
  • Pineapple – 12 slices
  • Rum – 2.5 cl
  • Brown sugar – 90g
  • Flour – 150g
  • Egg – 1
  • Baking powder – 1/2 packet

Step 1: Prepare the Caramel and Pineapple

Begin by making a dry caramel using the sugar. Once formed, place 5 pineapple slices on the caramel and allow them to caramelize for a few minutes. Add 2cl of rum and flambé the mixture. Set aside to cool.

Step 2: Prepare the Cookie Dough

Mix the soft butter with brown sugar until creamy. Add the egg, followed by flour and baking powder. Fold in small pieces of pineapple (cut from 2 slices) and 0.5cl of rum. Shape into 5 evenly sized balls.

Step 3: Baking the Cookies

Place the dough balls on a baking sheet and press them down slightly. Bake in the oven at 180°C (356°F) for 10 minutes. Remove the cookies while they’re still soft and press a pineapple slice onto each one, embedding it slightly. Return to the oven for an additional 2 minutes.
