Introducing Spicy Pepper and Chili Sauce: Adjika
Today, I’m excited to share a recipe for a spicy pepper and chili sauce known as Adjika, a popular condiment in Moldova and various Eastern European countries. This sauce is typically made in large quantities during the summer, peak season for peppers and chilies, and preserved in jars to enjoy throughout the following year.

– 500g of 6% acidity vinegar (I used 600g)
– 600g sugar
– 500g red chili peppers (I used green ones)
– 2kg red bell peppers
– 1 teaspoon chili powder

Step-by-Step Guide
1. **Prepare Your Ingredients**
Start by thoroughly washing the peppers and chilies. Remove the seeds, then finely chop them using a food processor. It’s advisable to wear gloves while handling the chilies to avoid skin irritation.
2. **Cooking Process**
In a large saucepan, heat the vinegar and sugar together. Let this mixture simmer uncovered for about 15 minutes, or until the sugar completely dissolves and the mixture becomes syrupy, stirring occasionally. Next, add the chopped peppers and chilies to the pan. Continue to cook the mixture over medium heat, uncovered, for about an hour. The sauce should thicken considerably and reduce by about half, similar to the consistency of jam. Keep the sauce at a gentle simmer throughout cooking, stirring occasionally. Taste the sauce as it cooks, and if you prefer more heat, add chili powder according to your taste.
3. **Jarring and Preservation**
Once the cooking is complete, immediately transfer the hot sauce into clean, dry jars and seal them tightly. Turn the jars upside down and cover them with a blanket to retain heat. Leave them like this overnight to cool down completely. Store the jars in a cool, dry place, such as a cellar, until ready to use. Once a jar is opened, keep it refrigerated.
