Enjoy a fragrant fig jam that’s sweet with a hint of tartness, perfect on toasted bread or paired with aged cheese. This straightforward and delicious recipe enhances the fruits of late summer.
Ingredients
– 5 jars
– 1.5 kg of ripe fresh figs
– 800 g of granulated sugar (or jam sugar)
– 1 organic lemon (juice and zest)
– 10 cl of water
Instructions
1. Prepare the Figs
Wash the figs, remove the stems, and quarter them. Place them in a large pot.
2. Add Sugar and Lemon
Add the sugar, lemon juice, and finely grated lemon zest. Gently mix, cover, and let it macerate for 1 hour to extract the juice.
3. Cook the Jam
Pour in a small glass of water and bring the mixture to a boil while stirring. Reduce the heat to medium and let it simmer for 35 to 40 minutes, or until the jam thickens (to test, drop a little on a cold plate; it should set).
4. Jar the Jam
Immediately fill sterilized jars with the hot jam. Seal the jars, turn them upside down, and allow to cool at room temperature.
