This recipe is so simple that I debated whether it was even worth posting on my blog, ABCvosIG. However, since it’s a favorite of mine when spring arrives, I’ve decided to share it!
Ingredients
- Eggs: 2 units
- Milk or cream: A few tablespoons
- Baking soda: A pinch
- Choice of herbs: A few sprigs
- Ghee or olive oil: 1 teaspoon
- Salt and pepper: A few pinches
Preparation
1. Preparing the Ingredients
Finely chop the herbs (here I’ve used chervil, oregano, and chives). Break the eggs into a mixing bowl and add a drizzle of cream or milk, the baking soda, salt, pepper, and the herbs. Whisk well.
Cooking
Heat a small amount of ghee in a non-stick frying pan. Pour in your egg mixture. You can cook it in a couple of ways, depending on your preference:
- Allow it to cook gently without stirring until it reaches your desired texture (this is how I do it).
- Stir frequently with a spatula over higher heat for a scrambled effect.
