Enjoy a unique and nutritious eggplant caviar enhanced with frozen spirulina. Perfect as an appetizer, this eggplant caviar pairs wonderfully with whole grain bread, crackers, or corn chips.
Ingredients
For 4 People:
– Eggplants: 2 units
– Frozen spirulina: 1 tablet
– Garlic: 1 clove
– Salt: 1 pinch
– Pepper: 1 pinch
– Lime juice: 1 dash
– Olive oil: 2 drizzles
Preparation
1. Cooking the Eggplants
Preheat the oven to 400°F (200°C).
Halve the eggplants or leave them whole as preferred.
Lightly brush them with olive oil and sprinkle some salt.
Roast in the oven for 30 to 40 minutes, or until the flesh becomes soft.
2. Preparing the Eggplant Flesh
After cooking, scoop out the flesh with a spoon and transfer it to a blender.
3. Adding Other Ingredients
Add the frozen spirulina, fresh garlic, salt, pepper, and a bit more olive oil into the blender.
4. Blend and Season to Taste
Blend everything until smooth.
Taste and adjust the seasoning as needed, adding a dash of lime juice for a hint of freshness.
