A Vietnamese Delicacy: Airfryer Spring Rolls
Vietnamese spring rolls are traditionally filled with vegetables, meat, or shrimp, and wrapped in a rice paper before being fried to perfection. This Airfryer version offers an easy, healthier, and quicker way to prepare them.
Ingredients
For 4 servings:
- Rice paper
- 150g peeled shrimp
- 1 carrot
- 100g cabbage
- 3 dried black mushrooms
- 2 cloves of garlic
- 1cm piece of fresh ginger
- 3 tablespoons soy sauce
- Oil for brushing

- Start by soaking the dried black mushrooms in water according to the package instructions.
- Peel and grate the carrot. Peel and mince the garlic and ginger. Thinly slice the cabbage.
- In a pan, sauté the garlic and ginger in some oil. Add the grated carrots, sliced cabbage, rehydrated and chopped mushrooms, and soy sauce. Cook for a few minutes until the vegetables are tender.
- Stir in the shrimp and mix well.
- Take a rice paper sheet and place a generous spoonful of the mixture onto it. Roll the rice paper tightly around the filling.
- Lightly brush each spring roll with oil.
- Finally, cook the spring rolls in the Airfryer at 392°F (200°C) for 11 minutes.
