– Oxtail (cut into pieces): 1 piece
– Palm nuts: 1 packet
– Salted fish: 1 piece
– Hot pepper: 1 piece
– Seasoning cube: 1 cube
– Juice of one fresh tomato
– Crushed purple onion: 1 piece
– Pinch of salt
Preparation
1. Start by boiling water in a pot, then add the palm nuts and let them cook for 25 minutes.
2. In a pressure cooker, pre-cook the oxtail until it starts to soften.
3. Once the palm nuts are cooked, extract the juice and pour it into the pressure cooker with the oxtail, and continue cooking for another hour.
4. Add the salted fish, fresh tomato juice, crushed onion, and hot pepper, and cook for an additional 30 minutes. Then, add the seasoning cube and a pinch of salt. Let it simmer on low heat for 10 more minutes until red oil appears on the surface.
