Endives can be enjoyed in a variety of ways including salads, steamed, or even baked in dishes like gratins. Here, I present a foolproof recipe for cheese-topped endive gratin that’s perfect for a family dinner. This comforting dish turns the slightly bitter vegetables into a delightful meal, combining the sweetness of braised endives with the richness of ham and cheese.
Ingredients
– Endives: 4
– Shallot: 1
– Ham strips: 150g
– Grated Gruyère cheese: 100g
– Heavy cream: 200ml
– Salt: to taste
– Pepper: to taste
– Cooking fat: 2 tablespoons
Preparation
1. Chop the endive leaves into pieces. Thinly slice the shallot.
2. In a skillet, heat the cooking fat and sauté the shallot. Add the chopped endives. Mix well, season with salt and pepper, cover, and allow to cook gently for 20 minutes.
3. Remove from heat and let it drain thoroughly (about 1 hour).
4. Transfer the drained endives to a baking dish. Stir in the ham strips.
5. Sprinkle over the grated Gruyère cheese and pour the heavy cream evenly. Bake in a preheated oven at 410°F (thermostat 7) for 30 minutes until golden and bubbly.
To Finish
Enjoy hot, straight from the oven.
