“Electric Garland” Christmas Cookies: A Festive Delight!

Christmas shortbread cookies decorated like a string of lights. I found a simple photo online and the result was so charming. It was fun decorating them. These are cookies that can also be made with kids.

Ingredients

– Flour: 250g
– Sugar: 100g
– Soft butter: 125g
– Egg: 1
– Almond powder: 80g
– Icing sugar: 150g
– Lemon juice: 1 tablespoon
– Mini smarties: 1 pack
– Dark chocolate: 50g

Preparation

1. Shortbread Dough

Combine the flour with baking powder. In your mixer’s bowl, blend the egg with the sugar. Gradually add the flour+baking powder mixture and the soft butter. Mix everything with a paddle attachment until the dough is even. Wrap the dough and chill it in the refrigerator for 1 hour, although I prefer overnight. Using a rolling pin, roll out the dough on parchment paper, then chill again (the dough tends to warm up quickly and becomes harder to handle) for about 30 minutes.

2. Shaping the Cookies

Preheat your oven to 350°F (180°C). Cut out the dough using a round cookie cutter about 2.5 inches (6 cm) in diameter. Brush each with egg yolk, then bake for 10 to 15 minutes.

3. Royal Icing

In a bowl, mix the icing sugar and egg white, then add the lemon juice. Adjust the amount of icing sugar as necessary to achieve a consistency that is neither too runny nor too thick.

Decorating the Cookies

Coat the cookies with this icing. Let them crust slightly. Meanwhile, melt the chocolate in a double boiler. Transfer it into a small piping bag. Draw lines across the iced cookies. Place mini smarties on the chocolate lines to resemble the colorful bulbs on a string of lights. Allow the cookies to dry at room temperature. Store the cookies in a metal tin after they have dried.
