  • Mint Leaves: 20

1. Cheesecake Base

Start by preparing a 20 cm diameter springform pan or an adjustable baking ring. Preheat your oven to 350°F (180°C). Line the bottom of the pan with parchment paper. Gently fold in the grated, drained zucchini, being careful not to mash it. Melt the gelatin with a little water over low heat, then stir it into the creamy mixture.

4. Assembling the Cheesecake

Remove the prepared base from the refrigerator and pour the creamy filling into the pan. Smooth the top with a spatula to even it out. Refrigerate the cheesecake for at least 4 hours, or overnight, to set.

Serving

Before serving, carefully unmold the cheesecake. Garnish with thin strips of both yellow and green zucchini that have been lightly seasoned with salt and lemon. Drizzle with high-quality olive oil just before serving to add a shiny, fruity touch. Serve chilled, cut into individual slices.
