A simple yet incredibly satisfying dish, especially on a chilly day, slow cooker pork roast is a comforting and flavorful meal perfect for family gatherings or dining with friends. This recipe combines the tenderness of meat that has been slow-cooked at a low temperature with the gentle flavors of the accompanying vegetables. The slow cooking process allows the flavors to fully develop.

Ingredients

For 4 servings:

– 1 pork roast (about 1 kg or 2.2 lbs)
– 3 carrots
– 6 to 8 potatoes
– 3 cloves of garlic
– 1 minced onion
– A few sprigs of thyme
– 3 or 4 bay leaves
– 1 small carton or glass of white wine
– 1 bouillon cube or equivalent stock concentrate
– Salt to taste

Preparation

1. Begin by browning the roast on all sides in a skillet with some butter and olive oil.

Once the meat is nicely browned, stud it with the three garlic cloves and place it in the slow cooker.

2. Next, brown the minced onions in the same skillet. Once they are golden, deglaze the pan with a bit of white wine and dissolve the bouillon cube or crumble in the stock concentrate, letting it reduce slightly.

3. Peel and cut the carrots and potatoes, rinse them under cold water, and arrange them around the meat in the slow cooker. Add the onion reduction, the remaining wine, and enough water to come just about 1 cm below the top of the meat.
