Light and nutritious, this quick cod fillet with steamed vegetables prepared in a Cookeo only requires 10 minutes of cooking time. The skyr-based sauce enhances the protein content, essential for maintaining lean mass during weight loss.

Ingredients

For the Dish

  • Cod fillet: 2 pieces
  • Green asparagus: 10 stalks
  • Fresh shelled peas: 200 grams
  • Salt: 1 pinch
  • Pepper: 1 pinch

For the Sauce

  • Skyr: 2 tablespoons
  • Lemon: 1/2, juiced
  • Mustard: 1 teaspoon
  • Dill: 3 sprigs, chopped

Preparation

1. Cooking the Vegetables

Start by washing and drying the asparagus and peas. Place them in the steaming basket of the Cookeo. Season with salt and pepper. Pour 200 ml of water into the bottom of the pot. Set the Cookeo to cook under pressure for 7 minutes.

2. Cooking the Fish

After the vegetables have started cooking, place the cod fillets on top of the vegetables. Season with more salt and pepper. Continue cooking under pressure for an additional 3 minutes.

3. Preparing the Sauce

In a small bowl, combine the skyr, mustard, lemon juice, and chopped dill.

Plating the Dish

Evenly distribute the vegetables onto plates. Place the cooked cod fillets on top of the vegetables and finish by draping with the skyr sauce.

This meal, taking a total of just 15 minutes from start to finish, is perfect for a quick, healthy dinner that doesn’t compromise on taste or nutritional value.
