Cucumber, avocado, and shrimp toasts are perfect bites for a fresh, healthy, and tasty appetizer, without any bread or gluten.

Ingredients

For 4 people:

– 1 cucumber
– 2 avocados
– 1 tablespoon of lime juice
– 1 tablespoon of chopped red onion (optional)
– 1 tablespoon of cilantro
– A pinch of salt
– A pinch of pepper
– 20 peeled and cooked shrimp
– 1 tablespoon of olive oil
– 1/2 teaspoon of paprika or mild chili powder
– 1/2 teaspoon of garlic powder or fresh chopped garlic

Preparation

1. **Prepare the shrimp**
– In a bowl, combine the shrimp with olive oil, paprika, garlic (powder or fresh), salt, pepper, and a bit of chopped cilantro or parsley.
– Sauté them in a pan for 2 to 3 minutes on each side until they are nicely browned. Set them aside.

2. **Prepare the avocado puree**
– Peel the avocados and mash them with a fork in a mixing bowl.
