Linguine with Beans, Basil Pesto & Burrata – A Must-Try Recipe!

Ingredients

For 4 servings:

From Picard:
– Pesto sauce: 1 packet
– Peeled fava beans: 200 g

From the grocery store:
– Linguine: 500 g
– Mini-burrata or 2 regular burrata: 4
– Pine nuts: as needed
– Olive oil: as needed
– Sea salt: as needed
– Basil: as needed

Preparation

Total time: 30 minutes

Prep time: 15 minutes

Cooking time: 15 minutes

1. Place 10 nuggets of pesto sauce into a microwave-safe container and heat for 8 minutes, stirring halfway through.

2. In a wok, sauté the frozen fava beans with a drizzle of olive oil over high heat, then reduce to medium heat. Cover and continue cooking for 5 minutes; the beans should remain bright green and crunchy.

3. Season with sea salt and keep warm.

4. Meanwhile, cook the linguine in a large pot of lightly salted boiling water until very al dente. Drain and immediately toss them into the wok with the fava beans.

5. Turn on the heat under the wok, add the pesto, and mix thoroughly.

To finish:
Serve immediately by arranging the linguine in a nest-like shape on the plates. Spread the fava beans and pine nuts over and around the nest. Place 1 mini-burrata or half of a regular burrata in the center and enjoy.
