This particular salad is crunchy, aromatic, and has a hint of sweetness. It is both vegetarian and vegan-friendly, packed with vitamins, and also budget-friendly. With few calories, it’s an excellent choice if you’re watching your diet.

Ingredients

For 4 Servings:

Salad:
– Iceberg lettuce: 400g
– Carrot: 200g
– Apple: 1 piece
– Roughly chopped roasted almonds: 40g
– Celery: 1 bunch
– Chopped parsley: 1 bunch

Dressing:
– Olive oil: 2 tbsp
– Orange juice: 3 tbsp
– Lemon juice: 2 tbsp
– Lemon zest: 1 tsp
– Dijon mustard: 1 tsp
– Honey: 1 tsp
– Sesame seeds: 1 tsp
– Coarse salt (or to taste): 1 tsp
– Pepper (or to taste): 1/4 tsp

1. Prepare the Salad

Thinly slice the lettuce and place it in a large salad bowl. Peel and grate the carrot, then add it to the bowl. Core and chop the apple into reasonably sized pieces and add these as well. Roughly crush the roasted almonds and chop the herbs, then incorporate them into the salad.

2. Prepare the Dressing

In a small bowl, combine all the dressing ingredients. Drizzle this mixture over the salad and toss well to coat everything evenly.
