– Beef rib: 600g
– Beef shank: 1 kg
– Carrots: 8
– Turnips: 6
– Leeks: 5
– Celery: 1/4 stalk
– Potatoes: 10
– Onions: 3
– Cloves: 4
– Garlic cloves: 3
– Bouquet garni: 1
– Peppercorns: 5
– Coarse salt: to taste

Preparation

1. Place all the meats in a large pot. Fill the pot three-quarters full with cold water and bring to a boil. Use a skimmer to remove any impurities that rise to the surface of the water.

2. To prepare charred onions, cut two onions in half with their skins on and char them on a piece of aluminum foil in a hot pan. Add these charred onions to the pot.

3. Add one whole peeled onion studded with cloves to the pot. Include the whole turnips, the quarter stalk of celery, whole peeled carrots, and leeks. Add peeled garlic, the bouquet garni, a few pinches of coarse salt, and the peppercorns.
