Dive into the aromatic world of Vietnamese cuisine with this rich and flavorful Pho Bo. This traditional beef noodle soup is made in a multi-cooker and features a broth infused with an array of spices including star anise, cinnamon, and ginger. It’s a perfect balance of complex flavors and comforting textures.
Ingredients
Serves 6
– 300g of beef or veal tail
– 1 onion
– A knob of ginger
– 1.5 heads of Chinese cabbage
– 1 stalk of lemongrass
– 4 kaffir lime leaves
– 8 star anise
– 2 cinnamon sticks
– 1 tsp coriander seeds
– 1 tsp fennel seeds
– 1 tsp black peppercorns
– 3 cloves
– 4 dried orange peels
– 1 tbsp coarse salt
– 30g fine sugar
– 1 pho broth cube
– 3 tbsp fish sauce (nuoc mam)
– Wheat noodles
– Green onions
– Sliced onion
– Fresh coriander
– Chicken broth cube
Preparation
1. Start by boiling the beef or veal tail in salted water for about 10 minutes. Drain and discard the scum.
2. Place the meat in the multi-cooker. Peel the onion and ginger, then slice the ginger in half.
3. Clean and slice the Chinese cabbage leaves. Add them to the cooker with the meat.
4. In a cheesecloth, combine 8 star anises, 2 cinnamon sticks, 1 tsp of coriander seeds, 1 tsp of fennel seeds, 1 tsp of black peppercorns, 4 dried orange peels, and 3 cloves.
5. Add the spice bundle to the pot with a split lemongrass stalk, 4 kaffir lime leaves, 30g of fine sugar, 1 chicken broth cube, 1 pho broth cube, and 3 tbsp of fish sauce.
6. Fill with water to the maximum fill line of the cooker. Cook for 30 minutes on the BOIL setting followed by 1 hour and 30 minutes on the SIMMER setting.
7. Before serving, strain the broth through a fine sieve. Remove the meat from the bones. Prepare noodles according to package instructions. Finely chop onions and green onions. Remove coriander leaves from the stems.
To Finish
Serve the hot soup in bowls with noodles, meat, green onions, sliced onions, optional Chinese mushrooms, and coriander leaves. Enjoy a steaming bowl of comforting and aromatic Pho Bo, perfect for any time of the year.
