– Bouquet garni: 1 unit

– Freshly ground pepper: to taste
– Chicken broth: 1/2 liter
– Country-style bread: 4 slices

Steps

1. Start by peeling and thinly slicing the onions. Peel and finely chop the garlic clove.

2. Melt the butter in a large pot over medium heat. Add the onions and garlic and sauté until they are lightly browned. Stir in the flour and mix well. Pour in the white wine and chicken broth. Add the bouquet garni, season with a pinch of salt and freshly ground pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 35 to 40 minutes on medium heat, stirring occasionally. At the end of cooking, remove the bouquet garni.

3. Preheat your oven’s broiler. Ladle the soup into individual oven-safe bowls. Place a slice of country-style bread on top of each and sprinkle generously with grated Emmental cheese.
