Today, I’m excited to share a recipe for a double cheese tomato sauce pasta bake. It’s a warm, comforting dish perfect for cold winter days, and it’s incredibly easy to prepare. This is a straightforward and affordable meal but doesn’t skimp on flavor, loaded with delicious, melty cheese. It’s a crowd-pleaser that both kids and adults will enjoy. My family absolutely loved it—it was a hit!
Ingredients
For 4 servings:
– Uncooked penne rigate (or any other pasta of choice), 350g
– Olive oil (3+1), 4 tablespoons
– Onion, 2 units
– Garlic, 2 cloves
– Crushed tomatoes, 800g
– Pasta cooking water, 200ml
– Dried basil, 1 teaspoon
– Dried oregano, 1 teaspoon
– Salt, 1 teaspoon
– Pepper, 1/3 teaspoon
– Shredded melting cheese, 150g
– Scamorza (or mozzarella), 300g
Preparation
1. Cook the Pasta
Boil the pasta until al dente as per the package instructions. Drain, saving a cup of the pasta water.
2. Make the Tomato Sauce
Heat a large skillet over medium heat (I set mine to 10/14) with 3 tablespoons of olive oil. Add chopped onions and garlic, cooking for about 5 minutes until they begin to slightly brown, stirring frequently. Mix in the crushed tomatoes and 200ml of the reserved pasta water, along with basil, oregano, salt, and pepper. Continue cooking for another 10 minutes, stirring occasionally. Once the tomato sauce is ready, stir in the shredded cheese until melted. Add the pasta and toss to coat evenly in the sauce. Remove from heat.
3. Preheat the Oven
Preheat your oven to 200°C (392°F) on convection mode.
4. Assemble the Bake
Slice the scamorza cheese. Grease a baking dish (mine is 22 cm) with 1 tablespoon of olive oil. Layer half of the pasta mixture into the dish, spreading it out evenly. Place half of the sliced cheese on top. Repeat with the remaining pasta and cheese.
Cooking
Bake in the preheated oven for about 20 minutes, or until the cheese is melted and slightly golden on top. Serve immediately and enjoy the deliciousness!
