A Delightful Pasta Dish from Summer Vacation
Here’s a friendly pasta dish I enjoyed during my summer vacation, which I loved so much that I recreated it at home!
Ingredients
– For 2 Servings:
– Penne or your choice of pasta (amount based on appetite)
– 1 Eggplant
– 1 Onion
– 200 grams Tomato Paste
– Herbes de Provence (as desired)
– Fresh basil (as desired)
– Olive oil
– Parmesan cheese
– Salt
– Pepper
Preparation
– Total Time: 35 minutes
– Prep Time: 20 minutes
– Cook Time: 15 minutes
Step-by-Step Cooking Process
1. Start by thoroughly washing the eggplant and slicing it into thin pieces. Wrap these slices in plastic wrap and microwave them for 5 minutes at 900W power.
2. While the eggplant is cooking, finely chop the onion and sauté it in a skillet with some olive oil until golden. Add the eggplant slices to the skillet and continue to cook. Simultaneously, boil the pasta until it’s al dente.
To Finish
3. Stir in the tomato paste, Herbes de Provence, and fresh basil to the skillet with the onion and eggplant. Season with salt and pepper to taste. Drain the pasta and add it into the skillet as well. Toss everything together well. Serve hot, garnished generously with grated Parmesan cheese. Enjoy your meal!
