– 400g boneless chicken breast or thigh
– 200g rice noodles
– 1 cm piece of fresh ginger root
– 1 clove of garlic
– 1 stalk of fresh lemongrass
– 3 tablespoons soy sauce
– 1 tablespoon brown sugar
– 2 tablespoons neutral oil
– Fresh coriander leaves
– 1 stalk of scallion

Step-by-Step Instructions
1. Finely slice the lemongrass, garlic clove, and ginger. Crush them together in a mortar with fish sauce, soy sauce, and brown sugar.

3. Pour lightly salted boiling water over the rice noodles. Allow them to soak until they soften (a few minutes should suffice). Drain and season with 1 tablespoon of oil.
4. Heat the remaining oil in a wok. Once it’s nearly smoking, cook the marinated chicken pieces over high heat, stirring continuously.
