This vegetable lasagna layers zucchini, eggplant, and bell peppers between swathes of tomato sauce and béchamel. It’s a vibrant and fulfilling dish, ideal for a summer dinner.

– 12 lasagna noodles
– 1 zucchini
– 1 eggplant
– 1 red bell pepper
– 400g crushed tomatoes
– 1 onion
– 2 cloves of garlic
– 500 ml béchamel sauce
– 100g grated Emmental cheese
– 3 tbsp olive oil
– A pinch of salt
– A pinch of pepper
– A handful of pine nuts

Step 1: Prepare the Vegetables

Start by washing the zucchini, eggplant, and bell pepper. Slice the zucchini and eggplant into even rounds, and cut the bell pepper into thin strips.

Step 2: Prepare the Tomato Sauce

Finely chop the onion and mince the garlic. Sauté them in olive oil, then add the crushed tomatoes. Season with salt and pepper and let it simmer for 10 minutes.

Step 3: Cook the Vegetables
